This soup warms me up just thinking about it. It has a little bit of spice, is warm and hearty. In short, it is everything you would want on a winter day! Given that the temperatures around here right now are in the negatives, I could not think of anything more perfect.

The soup starts as so many others, with onion, carrots and celery.

Add the garlic and taco seasoning and cook for an additional minute. Pour over the broth and add the potatoes. Bring to a simmer and cook for 10 minutes or until the potatoes are tender.

Add the red salsa, salsa verde and chicken. Simmer for 2-3 minutes. Pour soup into bowls and add desired toppings.

I love that this soup has an endless panopoly of possibilities for toppings - cilantro, green onion, tortilla chips, sour cream, cheese, avocado. You name it, you can add it! Tonight I served this with green onions, cilantro and tortilla chips and it was perfection.
