I have been making this quiche recipe for literally years. It is super fast to make (although it takes a while to cook), is delicious and packs a protein punch. This is a great use up for any leftover ham you may have from a Holiday meal.

I used a store bought pie crust for this quiche. I find that a deep dish crust works best to hold all the toppings.
I begin by adding the cheddar, ham and scallions to the crust. The actual recipe calls for you to add 1/2 cup of the cheese to the crust, layer in the eggs and then add the rest of your toppings. I was being lazy tonight, so I threw everything in all at once. It does not effect the outcome either way!

In a separate bowl, I whisk together the milk, cottage cheese, mustard, eggs and salt and pepper. Once combined, I pour the mixture into the crust.

Bake the quiche at 350 degrees for about 50 minutes, or until the eggs are set.

This is a delicious meal that packs a protein punch. I serve it for dinner with fruit and perhaps a muffin if my kiddos are feeling extra hungry!
