We are finally in the throws of winter around here. Temperatures are in the teens, we have snow on the ground, and we do not see the sun for days at a time. I wanted a muffin recipe to match the winter weather. To me, nothing screams winter flavors like cranberry orange, so I decided to make up a batch of these cranberry orange muffins.

This sweet muffin, offset by the tartness of the cranberries made these a refreshing treat on cold days. They were also a breeze to make.
To start, whisk together the wet ingredients - the vegetable oil, sugar, eggs, buttermilk, orange juice, orange zest and vanilla. My handy helpers love any excuse to zest something, so this was a great choice for them.

Then add in the dry ingredients - the flour, baking powder, salt, cinnamon and nutmeg. Mix until combined, being careful not to overmix.

Then fold in the cranberries. I love the pop of color!

Add the mixture to your muffin pan (or muffin tin) and bake for 15-17 minutes.
