My kids and I have been making this banana bread recipe for years. I think they like it so much because I let them use the potato masher to mash the ripe bananas. Anything that makes kids feel like the incredible hulk, right?

You can make this recipe into muffins or a loaf. I oscillate back and forth between the two, but today I went with a loaf. To make sure I could get it out of the pan, I lined my pan with parchment paper, and went the extra mile with cooking spray. Preheat the oven to 350 degrees.
For the actual batter, mash four very ripe bananas in a bowl.

Add oil, maple syrup, eggs, and vanilla until combined. Add the flour, baking soda, cinnamon, and chocolate chips. Mix until combined.

Pour the batter into the prepared loaf pan.

Bake for 50-60 minutes. I started checking mine at 45 minutes and it was done at 55 minutes. Remove and let cool before cutting.
